Super Greens…and a Cowboy

Ok, I am happily stuffed! My dinner – a late one at 9pm – was giant plate of organic greens with organic Lady Moon cherry tomatoes I picked up at Whole Foods yesterday – on sale 2 for $6! I sliced the cherry tomatoes in half and topped with salt, pepper, and of course, tons of hot sauce.

I topped off this fiber bonanza with a half a jar of Salpica Cowboy Red Bean dip. I am obsessed with this stuff and I drive great distances to find it. This is one elusive cowboy – only a few select stores carry it.  It fills you up and adds tons of flavor to everything. It’s more beans than salsa so you get some protein as well. I found this jar at Health Hut on Hwy 100 in Milwaukee today.

Now next week, I will be receiving my latest shipment from Vegan Essentials. I love those folks over there. I have been a loyal customer  since they first started their biz from a small store front in Milwaukee before they moved to Waukesha.  I ordered a new line of vegan nacho cheese “Nacheez Dairy-Free Nacho Sauce”, one mild and one spicy - I bet you can guess which one I’ll like better!  Order some here: www.veganessentials.com.

I also threw in some Tasty Bite 90 Second Indian Meals. These are great for quick lunches. I often just add some greens or organic veggies to them for volume – I’m all about huge quantities of food – giant bowls of food make me happy.

I’m super excited about new nacho sauce – I will be back with my review because some fake cheeses can be thick or way too yeasty tasting. Fingers crossed baby!

These are a few of my favorite things…

When the dog bites, when the bee stings, when I’m feeling saaaaaaaad…I simply remember my favorite things, and then I don’t feel…soooo baaaaaad!

I just opened my fridge and had to laugh because a) that really is how  little I have in there right now and b) it’s a perfect view into my world with bean dip, dirty martinis, and Cliff Bars being a few of my favorite things!

Peppadews – the tastiest little peppers

Recently, I was having dinner at a little place in Elkhart Lake called Lakestreet Cafe and as usual, I ordered a salad. My salad arrived with these little sliced red peppers on top. I took one bite of these little gems and was smitten! “What are these peppers? I asked. Peppadews!” he replied. I was so in love with these beauties I ordered a side order of these and then decided I would try to find these peppers so I could enjoy them at home. I don’t know what makes these peppers so elusive, but I could only find them online. I found them on amazon.com and they are well worth the shipping cost.

You can see the jar is empty. Peppadew I love you.

I made a simple salad with these along with some roasted zucchini I had in the fridge and I went on with my day – happily peppadewed.

Oh Happy Day!

I just received my order of Justin’s Dark Chocolate Peanut Cups in the mail today! One thing fellow vegans and people on gluten free diets can agree on is how much those freakin’ Reese’s Peanut Butter Cups have been missed right!? I am not going to crack them open until tomorrow – I do things like this, deny myself instant gratification to give myself something delish to look forward to in the morning. If I would have had one right away, the sweet bliss of these cups would be diluted!

Justin, I have one question. Are you married?

Now, after I packed all those yummy cups into my cupboard for safe keeping, I made myself some lunch. I had 2 giant portabello mushrooms leftover from my ma’s party on Saturday so I just threw them in the oven with salt and pepper and roasted them for 20 minutes. I also decided to have some Goya Tostones - which are so starchy and yummy – they say you should deep fry them which I have no doubt would have made them fifty million times better, but I do not have a deep fryer nor do I feel the need to add all that oil.  So I just threw those next to the ports I already had in the oven. They turned out just fine. Of course, anything is good with gobs of hot sauce all over it, I say.

MadCity Vegan Fest!

My first blog – and you are reading it! I’ve decided to start a blog after attending Mad City Vegan Fest 2011 http://veganfest.org/ today. I was inspired and got the boost of support I needed. I was feeling disheartened about this vegan journey of mine but I hope by sharing my vegan life I can inspire others. “Be the change you want to see in the world.”
